Usually on Fridays I try and come up with a fun meal if we’re not already ordering take-out from one of the three neighbouring towns! Soooo usually we make pizza!! And our little E loves his pizza so it’s a win-win!!
This week I thought I’d toss it up a bit and we’d make pasta (clearly the Italian know how how to do fun meals!!) So I mixed up my dough at noon (right after lunch clean-up, before naptime!). Here’s what I do:
1 1/2 cup all purpose flour
1 cup whole wheat flour
1 tsp salt
3 tbsp olive oil
In a food processor blend up the flour and salt. Pour in the beaten eggs and oil. Add water until a ball forms. Cover dough in plastic wrap and leave in fridge to rest. Roll out dough into desired shapes once rested at least 1 hour. (Mine rested until supper time!)
We rolled out our pasta very thin and then cut and pinched it into bow-ties! (One of E’s faves!) Boil in plenty of salted water and once the pasta pops to the surface I let it cook another minute or so and using a slotted spoon I toss it in a big bowl with sauce or flavoured oil.
Tonight I made a really simple sauce of canned tomatoes, frozen roasted tomatoes I had made this harvest, sautéed garlic and onion, and dried basil. Top it with freshly grated Parmesan and voila!! Friday night feasting begins…pour that red wine and dig in!
