TGTP (thank God there’s pizza!)

I make pizza a lot…like almost every Friday a lot! It’s fun, it’s easy, you can customize any way you like and it’s extremely kid friendly!  E loves to help!

I’ve been testing and experimenting and testing some more and I think I’ve finally found the perfect pizza dough recipe!! I love a thin chewy yet crispy crust, like what you’d find at a true pizzeria with a wood-stove oven even!! This is the closest I’ve gotten at home! The trick is to make the dough at least a day ahead! Just mix it up, put it in an air-tight container in your fridge and then take it out an hour an a half before you’re going to make it! Here’s the dough recipe:

  • 2 cup flour
  • 3/4 cup water
  • 1 tsp salt
  • 1 tsp yeast
  • a good glug of olive oil

Lastnight we made our pizza into a trio! A basic tomato, basil and mozzarella, pepperoni and mushroom, and then a pesto-based sweet potato, mushroom and feta one!

I just used plain canned crushed tomatoes for the sauce and dolloped it with some frozen basil pesto I had for one and sprinkled it with epicure pizza spice on the other.

This is our work of art right before we carefully transitioned it straight onto the rack of our 425* oven. (This is why we made it on parchment paper, the parchment serves as the pan in this case since I don’t have any pans big enough! I think it contributes to the crispiness of the crust too by not being on a pan!). I baked it until it was bubbly (and boy did we get some big bubbles this time!) and golden.  Grab a couple cold ones and you have a fantastic Friday night in!
