Not Your Average Waffle!


A twist on the traditional with these savoury delights this Sunday morning! To kick off my favorite week of the year I bring you “Spinach Bacon Cheddar Waffles” inspired by the green, white and orange of the Irish Flag! (with no artificial colorings.) They’re so easy to whip up and it’s only the beginning of all you can do with your waffle iron! We topped ours with a poached egg and mushroom bechamel and served them with piping hot Irish coffee! (In our pjs of course!) Delish!


Here’s the recipe:

  • 1/2 cup melted butter
  • 2 eggs
  • 1 3/4 cup milk
  • 1/2 cup frozen, thawed and drained spinach
  • 3 slices bacon, chopped
  • 1/2 cup grated cheddar
  • 1 1/4 cup all purpose flour
  • 3/4 cup whole wheat flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Mix the wet ingredients with the spinach and bacon, add the dry ingredients and the cheddar.  Mix well and dollop onto a hot, greased waffle iron.  Bake according to iron.

These waffles freeze well too; just pop them into an oven or toaster to reheat!
