Continuing with the St. Patrick’s Week feasting theme I introduce to you Jameson Whiskey-ed BBQ Sauce! This BBQ sauce is a sweet and tangy medley with a gentle kick from that fine Irish whiskey! It would be great on ribs, pork tenderloin or chops, or on chicken like we had tonight!
Making your own BBQ sauce is incredibly easy and it’s so nice to be able to control the quality of ingredients that you use not to mention the amount of salt and sugar you use. This particular sauce is sweetened with honey which is even better!
Here’s the recipe:
- 1/2 onion, diced
- 1 tbsp olive oil
- 1/2 cup honey
- 1/4 cup whiskey
- 1/4 cup vinegar
- 2 cups crushed canned tomatoes
- 1 tsp chili powder
- 1/2 tsp chili flakes (optional)
- salt and pepper to taste
- 1 tbsp balsamic vinegar
In a saucepan sauté the onions in the oil until tender and translucent. Add the honey and whiskey and cook out the alcohol. Add the remaining ingredients (except the balsamic vinegar). Simmer until sauce thickens. Use a hand blender to smooth out the sauce then add the balsamic and bottle it up or use it as desired!
I smothered chicken breasts in this yummy sauce and served them with green beans and homemade Whole Wheat Soda Bread, had the weather been warmer and less windy I would have cooked the chicken on the outdoor grill but even oven-baked, tonight’s meal was a winner!
