Supper tonight was delicious…I’m talking “hubby didn’t even know there wasn’t meat delicious”!! And the best part? (Ok besides the fact that E wolfed it down like nobody’s business too.) It is so extremely good for you! Oh! And it’s made in the crockpot so no muss, no fuss! It seriously is a win/win/win!!
Here’s how I made it:
- 1 onion, diced
- 2 stalks celery, diced
- 3 md carrots, grated
- 1 cup cooked green/brown lentils
- 1 cup romano beans
- 1 cup diced mushrooms
- 1/2 green bell pepper, diced
- 1/2 cup barley
- 1 jar canned tomatoes, drained and crushed by hand
- 1 cup crushed tomatoes
- 2 garlic cloves
- 2 bay leaves
- 1 tsp paprika
- 1 tsp cajun spice
- 1/4 tsp dried oregano
- 1/4 cup your favourite BBQ sauce (I used the Jameson whiskey bbq sauce I made)
- salt and pepper to taste
Throw everything together in a crock pot and stir. Cook on high for 4-5 hours or low 7-8 hours. We served ours with grated cheddar, a dollop of plain greek yogurt and cilantro. It’s that easy! And trust me, it’s that delicious, it actually even surprised me how yummy it was! A perfect meal to warm up with after a chilly spring day outside!
