St. Patrick’s Day TreatsūüćÄ

Rice Krispie treats are so easy to make and are always such a crowd-pleaser especially with kids! ¬†For St. Patrick’s Day fun we added Lucky Charms to our traditional recipe (using half Rice Krispies and half Lucky Charms in the recipe found on the cereal box). ¬†This is such a simple way to be festive this week. ¬†E helped me with the green sprinkles after I had pressed the gooey mixture into the pan and he loves pointing out the marshmallow charms as he devours his treat! ¬†We’re hoping they’ll bring us some luck and maybe a leprechaun or two come St. Patricks Day!

  • 1/2 cup butter
  • 1 pkg large marshmallows
  • 1 tsp vanilla
  • 5-6 cups rice krispies
  • 4-5 cups lucky charms
  • green sprinkles for decorating

Melt the butter and marshmallows in a large pot, once melted take off the heat and add the vanilla, stir then add the cereal. ¬†Press into a greased or parchment lined 9×13 pan. ¬†Wet your hands so the marshmallow doesn’t stick and press the treats evenly down into the pan then add green sprinkles on top! ¬†Let cool and set before you slice and share!

I have to admit I don’t buy sugary cereals unless it’s a special occasion. ¬†We’re a plain Cheerios and Rice Krispies kind of home. ¬†This summer I bought the fun pac of mini cereals for our camping adventure though and what a trip down memory lane that was! ¬†Growing up we rarely had sugary cereals either but camping always meant the fun pacs (and usually a fight or two over who got the corn pops!) and so the tradition continues.

I did however indulge and buy a box of Lucky Charms this week to make these treats with my boy…and since the recipe doesn’t use the entire box we have also been snacking on the remainder…aka E picks out the marshmallow charms and I eat the sugary oat pieces! ¬†In our house St. Patrick’s Day is like Christmas though and so there are more treats shared than normal! ¬†Everything in moderation after all! Only 2 more sleeps until the big day! ¬†(I wonder if we’ll be able to trap a leprechaun this year! These treats should help!)
