This healthy sugar-free (made with honey) and dairy-free banana bread recipe is easy enough to whip up on a busy morning and it can save your butt as a quick grab-and-go breakfast on an even busier morning! A great feel-good recipe for the weekend. Add a smear of nut butter and amp up the heartiness even more!
Here’s how you make it:
- Mash up 2 over-ripe bananas with 2 eggs, 1/2 cup honey, 1/2 cup applesauce, 1 tbsp vanilla and 1/2 tsp salt.
- To the above wet ingredients add 3/4 cup oat flour (I just blitzed up rolled oats in my bullet until course flour), 1 cup all purpose flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp cinnamon.
- Pour batter into a greased then parchment paper lined loaf pan, bake at 350• for 45 mins or until pick inserted into the loaf comes out clean!
Feel encouraged to make it your own too! Add nuts or seeds, coconut, raisins, chocolate chips, a different spice blend such as as nutmeg or ginger, more nutrient dense grains such as flax, chia or even hemp! My kitchen smelled amazing this morning. I recently got a new range and I’ve never been able to create a loaf this evenly baked before! I was so pleasantly surprised and delighted! Nosh-on to that!
